Ricotta Cheese Cookie
Ingredients For Ricotta Cheese Cookie:
1/4-pound butter
1-cup sugar
2 eggs
1-cup ricotta cheese
1/2-teaspoon baking soda
2 cups flour
1 1/2 cups coconut
1-teaspoon baking powder
1-teaspoon salt
4 ounces cherries chopped
1 (6 ounce) bag chocolate chips
Instructions For Ricotta Cheese Cookie:
In a mixing bowl add all ingredients in the order that you see above.
Add more flour if dough is too sticky, on a baking sheet lined with baking parchment or lightly greased drop ricotta cheese cookie on pans with a teaspoon, 1/2 teaspoon per cookie continue until dough is all gone.
Bake ricotta cheese cookie in a 350 degree preheated oven for about 10 to 12 minutes or until lightly brown.
Prepare a glaze from powder sugar and milk, glaze should be thick enough for dipping and dip each cookie when cool and sprinkle colored jimmies when glaze is wet (as in photo above).
