Chocolate Torte
Chocolate Meringue Torte
Ingredients For Chocolate Torte:
6 egg whites
1/2-teaspoon cream of tartar
2 cups sugar
1 cup chilled whipping cream
12 ounces semisweet chocolate pieces
1-tablespoon instant coffee
1/4 cup boiling water
1-teaspoon vanilla
Instructions For Chocolate Torte:
Heat oven to 275 degrees, cover 2 baking sheets with brown paper. Beat egg whites and cream of tartar until foamy. Beat in sugar, 2 tablespoons at a time, continue beating until stiff and glossy. Do not under beat. Shape meringue into 4 seven-inch circles on brown paper. Bake your chocolate torte 1 hour. Turn off oven; leave meringue in oven with door closed 1 hour. Remove the chocolate torte from oven and let meringue cool.
In a chilled bowl beat whipping cream until stiff. Melt chocolate pieces in top of double boiler over hot water. Stir in coffee and boiling water. Beat until creamy and slightly cool, fold in whipping cream and vanilla. Stack meringues spreading chocolate mixture between layers and on top. Refrigerate the chocolate torte at least 6 hours. Cut into wedges to serve. Chocolate torte makes 10 to 12 servings.
